If you live in an apartment in Charleston, SC you have waited all summer for oyster season. Labor Day is the perfect occasion to host the first oyster roast of the season. There's nothing like an oyster roast to kick off the fall season.
Have fun by throwing your own roast for your apartment neighbors and friends.
Before your party gets underway, you'll need a few things. Figure a bushel for every 5 people. For roasting you'll also need a burner and propane tank, or a grill and a burlap sack or beach towel. Also have on hand oyster or paring knives.
One you have the pot or grill hot, put the oysters on to roast. Cover the oysters with a soaking-wet burlap sack or thick beach towel. Cook oysters 8 to 10 minutes. The shells will open about ¼ to ½ inch. Transfer the oysters to a newspaper-lined table. Then repeat the procedure with more oysters.
Pry open oysters using the oyster knifes. Run the knife under the oyster meat to release it. Serve with dipping sauce. Many prefer saltines and Tabasco or other favorite hot sauce. Enjoy! And happy Labor Day from Abberly at West Ashley!
